Description Recent studies have suggested and proved that shear stress arising from the fluid flow can affect protein stability. As proteins are commonly exposed to shear stress during the various steps of the downstream section, this is a subject of increasing interest. The present experimental project aims to give a qualitative and quantitative estimation of the various sources of shear stress and identify any critical operations and/or processing conditions. In this framework, a critical role is played by the scale-down approaches, which aim at maintaining the similarities among the commercial and laboratory scales.
