Description The work focuses on the bibliographic survey of visual recognition techniques used in the secondary agri-food industry, specifically in the processing of beef and pork, dairy products and fruit. The use of machine vision techniques for the quality control of transformation processes, finished and semi-finished products is analysed, exploring the different areas of application, advantages and disadvantages, and presenting a taxonomy of the available techniques.
