Description The human diet has been dynamically reshaped during the last decades, partly driven by the envi-ronmental impacts attributed to certain societal choices. However, alternative food and supplements formulation requires the utilization of technologies that can meet societal needs (in terms of nutrition quality) without compromising the stability of natural ecosystems. In this regards, fungal biotechnology offers a wide range of possibilities, to cope with environmental issues and to pro-vide quality nutrition to different population groups, at reduced energy, water and materials costs. This thesis proposal is intended to perform exploratory tests on retrieved substrates matrices and fungal strains, to be used for human nutrition (and supplements formulation).
